The Water Grill a popular seafood restaurant in Southern California has announced that it’s opening a Las Vegas location in the former space of Spago in the Forum Shops at Caesars Palace. The new restaurant is due to open February 15th next year and is owned by King’s Seafood Company which owns six seafood restaurant groups including the King;s Fish House which has a restaurant at the District at Green Valley Ranch.
Spago was a long time fixture at the Forum Shops having opened in 1992 before it moved to the Bellagio last June, its former space is a prime location which should be a great location for the Water Grill. The Water Grill has four locations in Southern California as well as a location in Dallas, i have visited the Costa Mesa location and had a very good meal with great service so I look forward to checking out the Las Vegas location.
Update March 11th 2019
The Water Grill restaurant was announced with a planned opening of February 15th of this year and then their Facebook group said Summer 2019 but now it looks like the restaurant may open by the end of this month. I guess we have to wait a little longer for dozen varieties of fish prepared daily for lunch and dinner or the chilled shellfish menu but if you love seafood it’s worth the wait.

As Independence Day in the United States draws near Las Vegas resorts will start to be announcing if they plan to have public firework displays on July 4th. The event is being called “We Love Locals July 4th Fireworks Blast” and both shows will start at 9 pm with show length of about 9 minutes long each. Recently we have seen several Las Vegas sports books get upgrades with new televisions and updated technology such as at the Westgate’s large sports book. The latest sports book to be updated is the one at the off strip Boulder Station were the old hand written signage is being replaced with the more modern video screens. Station Casinos has announced that Green Valley Ranch will also get made over and modernized after Boulder Station with their properties Palace, Sunset and Santa Fe after that. As sports books have to complete with things such as portable sports betting terminals they need to justify their floor space in a casino and with the use of more modern sports books with high tech video screens hopefully draw in new people. The days of grease or blackboards with hand written odds are numbered and eventually even the smallest casino sports book will have video screens with the odds as well as a more modern appearance which will be an improvement to some of the sports books now.
We don’t often write about the Green Valley Ranch resort on this site mainly because we visit their sister property the Red Rock Resort more often, which is a shame because Green Valley Ranch is a beautiful property. If you want an excuse to check it out and are in town at the end of the month you might want to attend a five course dinner with wine paring at a special event on October 29th. The event is being held in Hank’s Fine Steaks & Martinis with a ticket price of $125 which may sound expensive but are getting a five course meal which is being prepared under the direction of executive chef Luigi Iannuario.
Pizza Rock the popular restaurant in Downtown Las Vegas which is known for great pizza has been on somewhat of an expansion recently as it has just opened a second location at Green Valley Ranch. Now the owners of Pizza Rock are continuing their expansion with a new restaurant concept called Little Tony’s which is opening at Palace Station. The new restaurant is due to have its grand opening this Friday although most likely it could open earlier for things such as media and testing of the new format. The new restaurant will most likely serve up the amazing pizza that Pizza Rock has been known for as will as some classic Italian entrees. The hours for the new restaurant for Little Tony’s at Palace Station are from 11am to midnight Sunday to Thursday and from 11am to 1am on Fridays and Saturdays. If you want to check out the new restaurant and great pizza at the Palace Station location its a short cab ride or drive from the Strip across the interstate.
